Wolf Coffee Anzac Biscuits

Anzac day is around the corner, and while it may feel like we are stuck at home it's a reminder of the freedom we have. Dawn service looks a little different this year, so this year we decided to make the perfect Anzac biscuits
(with a lot of trial and error)

What you need:

  • 110g rolled oats 
  • 110g desiccated coconut 
  • 150g flour 
  • 150g butter
  • 90g golden syrup 
  • 220g sugar (we used white but feel free to use raw/brown)
  • 1/2 tps baking soda
  • 1/2 tps water
    1. Preheat your oven to 180°c
    2. Combine oats, coconut, and flour into a bowl
    3. In a saucepan heat butter and golden syrup, once the butter has melted add sugar and stir. This should be creamy and caramel in colour.
    4. Add the baking soda and water to the butter and mix
    5. Pour the butter into the oat mix slowly while mixing together with a wooden spoon
    6. Once all combined, use your hands to finish mixing the mixture
    7. Roll the mixture into balls of about 3-4cm and place onto a lined baking tray. Press down on the balls slightly.
    8. Bake for 10-15 minutes
