Caqueta is a south of Colombia, where you will find many flatlands but on the west side you will find the Eastern mountain range which is where the coffee is being grown. The Rodriquez family are focused on specialty coffee. They are constantly looking to improve processes in the farm, experimenting in the farm and cupping their own in order to find the best way to highlight the amazing quality of their coffee.
The Anaerobic fermentation consists of sealing the green beans in a sealed plastic bag for 54 hours at a controlled temperature of 18-25 degrees. The beans are then dried on beds in the farm for 30 days then stabilised in Grainpro bags for another 15 days.
