Diofanor Ruiz

Diofanor Ruiz was born into a traditional family of coffee farmers. After working on the farm from a young age, he became a certified coffee farmer in 2003 and purchased his farm La Divisa in 2005.

Diofanor has planted a range of native trees to not only improve soil composition, contribute to the agroforestry but also provide shade and fruits to the farmers throughout the day. When discussing this with Alex, he mentioned “we’re all here for a reason” Diofanor feels that he was “put on this earth to work in harmony with the land, animals and people”

Diofanor is constantly working on ways to improve protocols and measures to ensure quality of life for his family and farmers- but also the quality of the coffee. Traditionally farmers don't taste their own coffee due to lack of education and understanding. After harvesting in his first year, Diofanor decided to make a change! By tasting his coffee he is able to create more quality-focused practises. This ensure quality and consistency to the coffee that we are lucky enough to enjoy on our side of the world. It was an honour to meet, and spend time with Diofanor. 

While visiting La Divisa, we saw Diofanor's processes first hand. Once harvested the cherries are put into a water bath- the cherries that float, are no good!- these cherries are removed and repurposed on the farm. The cherries are then hand sorted, and the fermentation process begins. The fermented cherries are then pulped and dried out in the sun. Diofanor then roasts and tastes the coffee. If approved- it is then bagged up and distributed!
