El Silencio

Sara and her team hand-pick only the ripest cherries at El Silencio farm, then sort and float them to remove any underripe or defective fruit. Sara leads a 42-hour anaerobic fermentation using the Cofinet protocol, with beer hops added to the mix, drawing out a delicate, floral cup with sweet praline notes. The cherries then dry slowly, carefully turned to ensure even airflow and prevent mould, down to a moisture content of 9.5–11% for peak quality.

Caturra

A spontaneous mutation of Red Bourbon discovered in Brazil in the late 1910s. Caturra is shorter and denser than its parent thanks to a genetic quirk that limits vertical growth. That smaller stature makes it easier to maintain and harvest. A practical, farmer-friendly variety that's earned its place as a coffee-growing staple.
